Since we have to adapt to different time zones for the global games I must also be conscious of my fiesta menu for some of these early morning matches. She is the inspiration for many of the recipes I share here on Lola’s Cocina and the reason I developed a love of cooking at the ripe old age of eight. My great grandma Angie’s beef short rib recipe includes a perfect mix of protein, veggies, and starch – everything necessary for a hearty one-pot meal. All you have to do is add your ingredients to a roasting pan, and let your oven do the work.
