Rarely are sequels as good as the originals but in the case of my Pineapple-Cucumber Agua Fresca with Mint, this couldn’t be further from the truth. Building upon my original Cucumber Agua Fresca recipe, I added two complementary ingredients that work to enhance the flavor of an already delicious drink. The sweet pineapple and fresh mint add just the right touch to the cool cucumber. I am confident that audiences across the board will agree that this sequel is worthy of an Oscar!
1/2 medium-sized pineapple peeled and roughly chopped (I leave in the core)
1 large cucumber roughly chopped
1/2 cup sugar
20 large mint leaves, divided
6 cups water
- Working in batches, blend pineapple, cucumber, sugar, water, and 10 mint leaves on medium setting for 60 seconds.
- Strain through a fine-mesh sieve into a large pitcher. You may need to agitate the mixture to let the juice through, but avoid pushing through the pulp to keep juice light in consistency. Discard or compost seeds and pulp.
- Add remaining 10 mint leaves and stir.
- Chill and serve over ice. Garnish with fresh mint, sliced cucumber, or cubes of pineapple.
