3 large star fruits
5 cups water
1 ½ teaspoons pure vanilla extract
¼ cup sugar (or to taste)
Turbinado sugar to rim glass (optional)
- Slice star fruit into ¼-inch pieces. Set aside a few slices for garnish.
- Blend star fruit with water, vanilla, and sugar on high for 60 seconds.
- Strain through a fine-mesh sieve into large pitcher. You may need to agitate the mixture to let the juice through, avoid pushing through the pulp to keep juice light in consistency. Discard pulp.
- Chill and serve over ice. Garnish with sliced star fruit.
