Mango-Papaya Paletas with a Raspberry Twist
I have always been a sucker for paletas – especially on hot summer days. Why? They are refreshing, healthy and with just one bite, I am transported back to Mexico! This recipe features papaya, Ataúlfo mangos (a.k.a. champagne, honey, or Manila mangos) and a few raspberries, which add a tangy twist. Fruity and tropical in flavor, these paletas can be enjoyed all summer long!

Ingredients:
4 ripe Manila mangos peeled and pitted
1/4 medium papaya peeled, deseeded, and roughly chopped
2 limes freshly juiced (I prefer Mexican or key limes)
1/3 cup agave syrup or organic sugar
1/2 cup water
1 cup fresh raspberries
Preparation:
- Blend mangos, papaya, lime juice, agave syrup, and water until lightly pureed. Mixture should be slightly chunky.
- Pour mixture into popsicle molds.
- Add a few raspberries into each mold, pushing them down with a popsicle stick to ensure that they are distributed evenly. Add a single raspberry to the end of each popsicle stick before placing it into the mixture.
- Freeze overnight and enjoy.

They do! You won’t be disappointed. I thought that the papaya flavor would take over all of the other flavors, but it doesn’t. It’s subtle. You can even taste the lime.
