Honeydew Mint Paletas

Today marks the first official day of summer and #PaletaWeek 2017 and I’m kicking off the festivities with delicious paleta recipes from some of my favorite bloggers. This year’s recipe lineup includes everything from sweet and spicy to kid-friendly favorites that will get you and your family through even the hottest days of verano.

Today’s recipe is an ode to summer and became an instant family favorite. Combining fresh mint with sweet honeydew adds a burst of freshness and is an easy way to broaden any child’s finicky little palate. Amado wasn’t even done with his first paleta and was already asking for a second.

This time around I wanted to create easy kid-friendly paleta recipes that require no more than three ingredients and ten minutes to prepare. Amado loved helping me in the cocina and especially enjoyed his new role as my taste tester. He gave these paletas two thumbs up (at least I think that’s what the wink means). Ingredients:
1 large honeydew melon, seeds removed, peeled, and roughly chopped
¾ cup water
½ cup agave (or to taste)
20 large fresh mint leaves

Preparation:

  1. Blend melon, water, agave and mint leaves on high until completely smooth, about 60 seconds.
  2. Strain mixture through a fine-mesh sieve into a large container with a spout. You may need to agitate the mixture, but avoid pushing through the pulp to keep it light in consistency. Discard or compost pulp.
  3. Pour mixture into popsicle molds and freeze overnight.

Be sure to remove honeydew seeds before peeling and chopping.

I tried to skip this step, but the mixture separated immediately.

Use plastic wrap or foil (and not the plastic lid that comes with these molds) to hold the popsicle sticks in place because the lid is hard to remove once the popsicles freeze.

Remember to run popsicle molds under hot water for a few seconds until the paletas are loose enough to wiggle out of the mold.
