DIY Chipotle Sage Butter

In November I hosted an Edible Gifts for the Holidays Workshop where students learned to make homemade vanilla extract, infused booze, and prepared sweet treats that made perfect gifts for friends, family, and coworkers. We also made this chipotle sage butter and it was all the rage.

I gifted one to a friend who slathered it over a whole chicken before roasting it and my sister served it with dinner rolls on Thanksgiving. There’s something about the combination of fresh sage and spicy chipotle that blends perfectly and takes butter from ordinary to extraordinary. I’ve been using my fancy new butter on warm flour tortillas and roasted corn and melting it over popcorn. Ingredients:
1 stick salted butter
1-2 chipotle peppers in adobo sauce, finely chopped
2 tablespoons finely chopped fresh sage
1 garlic clove, finely chopped

Supplies for Gifting:
Plastic wrap
Parchment paper
Tape
Twine

Preparation:

  1. Set butter out at room temperature to soften.
  2. Once soft, add butter, chipotles, sage, and garlic in a bowl and mix well.
  3. Store in an airtight container or if giving as a gift, form into a log for slicing, wrap in plastic wrap, then in parchment paper, and decorate with twine.
