Mesones Sacristía, Alonso Hernández
Classes at Mesón Sacristía take place inside a boutique hotel located in downtown Puebla. Resident chef, Alberto Hernández leads classes, which cost approximately $70 (for one person with discounts available for more people) and include instruction and recipes for two different salsas, the famous mole poblano (or other seasonal dishes), and agua fresca. They conclude with a sit-down meal in the hotel’s lovely outdoor patio.

Highlights:

  • Alberto is super friendly and knowledgeable about local cuisine and students learn the three most important Mexican cooking techniques: roasting, boiling, and frying
  • Students prepare everything from start to finish and have the option between making a large batch of salsa with a traditional molcajete (stone pestle and mortar) or with a modern blender
  • Classes are private or semi-private and cost about the same as larger group classes in Mexico
