This ensalada de pepino (cucumber salad with vinegar and sugar) is fresh, colorful, and takes only 5 minutes to prepare. It doesn't get much easier than this!

Ingredients
  

  • 1 English cucumbers
  • 2 Persian cucumbers
  • ¼ small red onion
  • 2 ounces vinegar white or red wine vinegar will work
  • 1 tablespoon sugar or to taste
  • 1 teaspoon Maldon Sea Salt (optional) or to taste

Instructions
 

  • Prepare ingredients. Cut cucumbers into thin rounds. Cut red onion into very thin slices.
  • Season your salad and mix. Dress salad with vinegar and sugar. Mix well. Refrigerate and allow ingredients to marinate for at least 30 before transferring to a serving bowl when ready to eat.
    PRO TIP: You can prepare this salad up to two hours in advance so that it absorbs all of the flavors.
  • Serve and enjoy. Serve with a pinch of finishing salt, if desired.
