Mango and Vanilla Yogurt Paletas

Have I mentioned that Amado loves fruit? Perhaps that’s why it’s been so easy to convince him to help make (and taste) paletas with me. We’ve been enjoying them all week and are having a tough time deciding on a favorite. These Mango and Vanilla Yogurt Paletas are definitely up there.

The marble look makes them look extra fancy, but in reality they’re quite easy to prepare and require only two ingredients. That’s right, two ingredients and no added sugar.

Also, if you don’t have fancy popsicles molds, don’t let that stop you from making paletas – I have used inexpensive ones from the grocery and dollar stores, small plastic cups, and even tequila shot glasses. You really don’t need anything fancy!

Ingredients:
2 Manila mangoes (also known as champagne or ataulfo mangoes), flesh only
8 ounces good quality vanilla yogurt

Preparation:

  1. Puree mangoes in a blender until completely smooth, about 60 seconds.
  2. Working in layers, fill the popsicle molds with mango puree and yogurt and continue rotating layers until you reach the top. Remove any air bubbles with a chopstick or butter knife – this also helps create the marbled effect.
  3. Freeze overnight.
